Hello Everyone! The story behind me attempting this recipe is that I always seem to struggle with celery. There are times where I’d buy a whole bunch for a dollar (on special) when the halves weren’t available or if they didn’t have the bags of pre-cut celery sticks. The thing with me and celery is that I only use it when I’m making a bolognese or minestrone soup. I rarely use it for any of my dishes. So half the time it sits in the fridge waiting to be use, and then eventually thrown out because it’s been sitting there for weeks, possibly months. I know, most of you are probably thinking that I could’ve just eat them like that with some sort of dip, but in all honesty, raw celery isn’t quite my thing. Again, another rabbit food moment here.

So, I bought a bag of celery sticks last week for a dish that will be posted next week, and before going out to do my weekly groceries, I jumped online and search for a recipe that I could make that included celery – yes, I was determined to not waste my bag of celery! I came across this recipe from Taste and I thought that I’d give this one a go. I know, when I thought about it and how I mentioned that “raw celery isn’t quite my thing”, and here I am attempting a raw celery slaw. Well, I thought it was about time that I gave raw celery a chance and it did not disappoint. Well to be honest I could’t distinctly pick out its taste, maybe because from the crème fraîche dressing, but the crispiness and freshness from both the celery and apple paired with the creamy sweet yet tangy dressing really made the dish exciting to my palette. Why did I not think of this sooner! All those celery sticks that went to waste…

Celery & Green Apple Slaw Ingredients

PREP TIME 20 MINS | COOKING TIME | SERVES 2-3

INGREDIENTS

  • 4 celery sticks, cut into matchsticks
  • 1 large green apple, cut into matchsticks
  • 100g Danish feta cheese, crumbled
  • 1/3 cup walnuts, toasted and coarsely chopped
  • 2 tbsp crème fraîche
  • 2 tbsp freshly squeezed lemon juice
  • 1 & 1/2 tbsp chopped fresh chives
  • Pinch of caster sugar
  • Salt and pepper to taste

METHOD

  1. In a small bowl, whisk the crème fraîche, lemon juice, sugar and chives in a small bowl. Season with a bit of salt and pepper.
  2. Plate up the celery and apple matchsticks in a deep dish. Pour the crème fraîche mixture over the celery and apples, and top with crumbled danish feta and walnuts. Serve!

If you want to add some protein or omega-3 to this fresh, light slaw, you can have some chicken on the side, or as what I’ve done is grill some salmon to go with this dish. Season with salt, pepper, and lemon juice, pop in the grill oven for about 5 to 7 minutes (for a thin portion as what I had), and serve!

Hello Everyone and welcome back to an all new Review Sunday! Ampersand Café & Bookstore is one that I am very fond of mainly because of the memories and conversations shared over food. I have been going to Ampersand on a frequent basis over the past 4 years; it was the go-to brunch/lunch spot before or after classes at the then-COFA (now known as UNSW Art & Design). I remember popping by the café with Bec many times before our 9am classes; I would always get a regular latte, and she would always get a regular flat white. Then there are many times we’d visit for a quick brunch/lunch in between classes. Most recently, it was an after photography class lunch date for Anastasia, Jess, Jialing, and myself. We would sit and talk about the most random things for 2 hours, and even quote from White Chicks all throughout lunch.

What I also love about this café is that it is also a bookstore! It has a rustic, or as one would use the term, ‘hipster’ feel to it which makes it even that more inviting for the suburb that it is in. The café and bookstore has three amazing floors of dining areas surrounded with an adjoining library and bookstore with many books to choose from. A great place for those who just want to sit and immerse themselves in a book over a cup of coffee, or with friends over food.

Besides all the fond memories I have of this café, and the cozy ambience, the coffee and food are also quite excellent! The menu that you are about to see in this post is some of the dishes that my friends and I have indulged in. I have had many more dishes from this café but I think that during first two years of visiting this café I wasn’t taking any photos or I just can’t seem to find where the photographs are if I did take any. I have indulged in the Ampersandian, the Morning After Breakfast, and their Club Sandwich from their counter items. Nonetheless, I feel like the dishes on this post are quite a good range of the food that Ampersand has to offer. Also, I should make mention that they also have another café known as Ampersand on Crown | Café, Bar & Bookstore. I actually didn’t know that this existed until I went and had brunch with some friends at  Rustic Pearl. Ampersand on Crown was just right next to it! 413 Crown Street, Surry Hills for those who want to know where!

Their coffee art amazes me every time. I have yet to come across an ampersand on the drink as I have seen in many Facebook/Instagram posts by others.

What really struck me about this drink was that, on their blackboard menu, it said ‘seahorse eggs’. Being naive and gullible at that time, I legitimately thought that the drink actually had seahorse eggs it in. Only then did I come to a realisation that the seahorse eggs referred to the frothy, fizzing bubbles in the drink. I was not disappointed though; the drink was absolutely amazing! However, probably not a great idea to have before a boring lecture (which was what I did at the time). It’s all in the name of the drink!

What attracted me to this dish was the fact that it was originally ‘arborio & barley risotto, tiger prawns, lemon butter, and crumbed pancetta’ on their blackboard menu. The combination sounded so great in my head that I had no second thoughts of wanting to order it. However, for a reason that I cannot remember, the lady at the cashier told me that their risotto for that day was confit cherry tomatoes, garlic, halloumi, and pesto. At first I was hesitating whether or not I should have that or order something else off their menu, but at that time there wasn’t anything else that tickled my fancy. So I decided to go for this, and absolutely no regrets. It tasted amazing! But I secretly think that the tiger prawns, lemon butter, and crumbed pancetta would’ve been amazing-er!

Braised beef cheeks (slow-cooked), seasonal veggies, potato rösti, and poached egg ($16.90)

This dish, that Jialing ordered and we shared with Annie, was again to die for! The only criticism I have with this dish that it said ‘poached egg’ and the egg we for that day was what you would get between a soft boiled egg and a hard boiled egg. No runny yolk! Disappointed. Other than that, the beef cheeks where tender and full of flavour; verging on the dry side which is why it was important that we had that runny yolk!

I mean, if these empty plates of the first two dishes mentioned above does not convince you of their deliciousness, then you sir are not my friend (the other empty plate is of the stuffed red capsicum which is the very last photograph on this post).

This is a winner side dish for me. I never fail to order these babies each time I visit Ampersand. But sadly over the past month in late October, early November last year, I did not get to have any. Why? Because their deep fryer had been broken during those times. But for a month? Pure torture. I have not been back since our last photography class which was in early November. Maybe it’s time I paid another visit – hopefully their deep fryer is fixed by now! I just love the thin crispy sweet potato sliced paired with garlic-y and tangy aïoli.

Besides their blackboard menu, they also have a selection of pre-cooked counter items. Possibly an easier and quick option for those who have their breakfast/lunch/brunch to go, but that never stopped us from trying them ourselves over a two hour lunch session. You can probably tell that we have a thing for their arancini as it appears in almost every counter item on this post, but are paired with a different salad each time. This is because no salad is ever the same whenever we visit the café. One thing that I do love about their salads is that they aren’t your regular Joe that you see in almost every café; they are pretty exotic to your taste buds! Black sticky rice? Miso chic pea? Cracked wheat? I mean, who would’ve thought these combinations would work so well?! Yum! So what you can do is order an arancini, sandwich, wrap, or whatever hot dish they have at the counter, and then add $5.00 on top for a salad on the side.

Hello Everyone! Back again with another lip-smacking recipe that will definitely fill your tummies (I am so full right now that I keep burping out loud, and my burps taste of garlic oops!). I love buffalo wings, just as much as I practically love every other chicken wing dishes out there. Now the easy option would just be to go to Coles and buy a pre-packed marinated bag of buffalo chicken wings and simply throw it on the grill and voilà! I mean, yes I have done that multiple times, at barbecue parties because it’s a quick and easy solution to getting ready-marinated meats on the day. But no, not today; I always have to take the long route, which I think is worthwhile especially if you’re learning how to cook. Taking shortcuts won’t allow me to get creative in the kitchen and experiment with recipes. It definitely won’t allow me to expand my abilities in the kitchen as well. I’ve been wanting to tackle this recipe for a while now, but never got around to until today.

Blue Cheese-Yoghurt Dip Ingredients

So today I posted these two images on Instagram. If you have an account, please look up @amcarmenskitchen and give me a follow. I usually post teaser images of the ingredients that I will be using for the recipe that will be posted on the blog later in the evening. I also always ask my followers to guess what dish I will be making based on the pictured ingredients. I try to make my Instagram feed as interactive as possible with my followers. Today I posted a blurred image and asked them to guess the 8 ingredients for today’s dip to go with these succulent buffalo wings. Didn’t quite get many responses but thank you to my girl Mel Barrass for guessing an ingredient right! I then posted the other image and got a response from my twin Pamela about how curious she is to know what I’ll be making from these ingredients.

For this, I looked at two recipes from the Food Network and tweaked the method a bit. But please do check out the original recipes as linked:

Baked Buffalo Wings with Blue Cheese-Yoghurt Dip

PREP TIME 10 MINS* | COOKING TIME 35 MINS SERVES 3-4

*Add an extra 4-5 hours waiting time for chicken to marinate

INGREDIENTS

For the buffalo wings

  • 15 chicken mid-wings, washed and cleaned
  • 85g unsalted butter
  • 1/3 cup sriracha hot sauce
  • 1 clove garlic, minced
  • 1/2 tsp salt

For the blue cheese-yoghurt dip

  • 3/4 cup greek yoghurt
  • 1/4 cup crumbled blue cheese
  • 2 tbsp mayonnaise
  • 1 tbsp milk
  • 1 clove garlic, minced
  • Juice of 1/2 a lemon
  • Ground salt and pepper to taste

METHOD

  1. Place the wings into a pot of boiling, salted water. Cover and reduce the heat to medium. Parboil the wings for 6-8 minutes. Remove the wings and carefully pat dry. Lay the wings out on baking dish lined with paper towels.
  2. Meanwhile, melt the butter in a small saucepan along with the garlic. Add the hot sauce and salt and stir to combine. Remove the paper towels and pour the hot sauce mixture over the wings and toss. Cover the dish with cling wrap and leave in the fridge to marinate for at least 4-5 hours before cooking.
  3. Meanwhile, combine the yogurt, blue cheese, mayonnaise, garlic, milk and lemon juice in a medium-szied bowl and whisk together until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve.
  4. Preheat oven to 220C. Line a baking tray with aluminium foil and place the wings skin side up onto the tray. Roast on the middle rack of the oven for 35 minutes, or until cooked through.
  5. Serve with blue cheese-yoghurt dip and a salad of your choice. In this case, I had a 4 leaf mix with a french dressing, and homemade roasted sweet potato fries. A great combination!

Hello Everyone! Today’s post won’t be a recipe, but instead I want to share with you this gem of a place that I recently visited with my ladies for what was supposed to be a nice Sunday brunch, but instead turned out to be a late lunch. In a nutshell, my friend Yvonne wanted to try this place out and recommended it to both Jialing and I. So Jialing and I planned our trip since we live in the same area, just a suburb away. We decided that we would get into the city at around 10am and meet Yvonne there to arrive at Double Bay by 10:30am and hoping to start eating by 11am. Yvonne then said it was too early and told us to come into the city around 11am, and I was like, what?!

Ally: But the whole point of brunch is that it is in between breakfast and lunch! Brunch for me is like 10am… 11am is already pushing it because it’s close to noon which is lunch for me!
Yvonne: When I said brunch, I actually meant lunch!

God bless her haha! Anyway, so we then decided to push it to meet up at 11am in the city, to be at Double Bay by 11:30am and have ‘lunch’ by noon. As usual, Jialing and I got to the city just 2 minutes past 11 and Yvonne was still at home. So we waited around for another 20 minutes for her and finally got on the bus to Double Bay. At this point I was super hungry also because I didn’t have anything to eat beforehand. We got to Double Bay at roughly around noon and when we got to Bar Indigo, man was it busy! We still had to wait for a table, another half hour. As we waited, we went through the menu and it was sounding so delicious – and a bit torturous being very hungry and all as we watched dishes go by. Finally we sat down and ordered and I can say that the wait was all worth it! The food was absolutely amazing (but then again I find EVERYTHING amazing, especially when I’m super hungry).

The food did not disappoint at all. The portions were massive! Actually their plates were massive as well that it could barely sit on the table we sat at! Also, their plates – loved them. I have a new sense of appreciation for plates ever since taking up an intro to ceramics class last semester – which by the way I got an overall High Distinction for (you know, those Lovelily plates I posted about probably weeks ago, yes those)!

The one thing I love about going out with my girls is that we all decide one one dish that we like most, and once the food arrives, we split our dishes into three, and share – which I think is the best thing to do if you want to be able to try more than one dish, especially if it’s your first visit. Simply amazing! I say this in particular because I do have other friends who don’t like to share dishes – that is if it is a dish that is not meant to be shared.

This was the dish that I ordered, and for one very particular reason as well which was the description. It just screamed my name! Salmon, eggs, and chimichurri?! Why not!

A dish that Yvonne ordered. The description isn’t as fancy as the others only because I completely forgot to take a photo of the menu description for this! And it wasn’t on their website as well because they changed their menu I think for the season. Nonetheless, that lamb was cooked to perfection and the flavour combinations went really well together. Loved the presentation as well (you can’t really see it in the photograph above, but those crispy flatbreads standing tall from the plate looked so majestic)!

And finally the dish Jialing ordered (or more like I recommended since the description appealed a lot to me as well). The risotto was really rich and creamy, packed with lots of flavour and just… SO yummy. And those duck sausages, just WOW.

After our lunch, we still had space for a yummy warm dessert (since it was freezing cold out). It was probably one of the best decisions we made together as a group only because I know for a fact that we usually go for a walk first after a meal to clear our bloated tummies, and then get dessert elsewhere, but this time around we decided to go for some fluffy pancakes because they looked oh-so-good on various Instagram accounts.

The winner for me, hands down. I actually wanted these pancakes to begin with but I thought starting the day (in terms of the first meal of the day) with sweet pancakes just didn’t quite fit with me, needed something savoury. JUST LOOK AT ALL THAT FLUFF!

One of my favourite spots indefinitely. Great food, great company. The bill scared me a little bit, but otherwise affordable, just not a place to eat at every single week – for me that is. Be sure to check this place out if you haven’t already done so! Cheers!

Hello Everyone! So about a month ago or so I entered a recipe into this year’s UNSW Student Cookbook 2014. The theme for this year was “Simple Recipes to Impress” or as it is aptly referred as “Simprecipes”. I originally submitted a recipe for fried chicken wings with a prawn and mango vermicelli salad, but since there was another chicken wing entry that already made the cookbook, I was asked to tweak my recipe and just submit the salad. Though it wasn’t quite what I submitted originally, I was still very happy that it was chosen – they loved it for the bright and fresh colours! I also realised though that mangoes are out of season in Australia right now so I doubt anyone will be trying out my recipe until the summer. Sucks. That’s why I love the tropics, all year round mangoes!

Today was the official launch of the cookbook and it was a great turnout! Good food, good drinks, good music. I helped with setting up in the morning, preparing the platters to go out, serving, and a little bit of packing up at the end. Oh and I also got to meet Kumar Pereira, Masterchef Australia’s Season 3 and Allstars contestant. Such a sweet and loving guy! Here’s my entry for the cookbook (I will also post the recipe down below if it’s a bit hard to read from the photo):

Prawn & Mango Vermicelli Salad


PREP TIME 10 MINS | COOKING TIME 10 MINS SERVES 4

INGREDIENTS

For the salad:

  • 200g rice vermicelli noodles
  • 500g cooked prawns, shelled and deveined
  • 2 ripe mangoes, cut into chunks
  • 1/2 bunch fresh mint leaves, loosely torn
  • 1 red bird’s eye chilli, sliced
  • 1/4 cup unsalted peanuts plus extra to serve, finely chopped
  • 1/4 head red cabbage, finely sliced

For the chilli-lime sauce:

  • 4 tbsp fresh lime juice
  • 4 tbsp rice vinegar
  • 4 tbsp water
  • 2 tbsp white sugar
  • 1 tsp sesame oil
  • 1 red bird’s eye chilli, finely chopped
  • 1 spring onion, finely chopped

METHOD

  1. In a medium-szied bowl, soak the rice vermicelli noodles in lukewarm water until tender, about 8-10 minutes. Drain and set aside.
  2. Combine sauce ingredients in a bowl and mix well (yields about 1/2 cup of sauce).
  3. Add the salad ingredients to a large bowl and mix through. Dress with the chilli-lime sauce and toss to combine. I’m a huge fan of all things spicy so don’t be afraid to add more chillies for those spicy-lovers out there!
  4. Garnish with extra peanuts and a few mint leaves. Serve.

This recipe is all about the intense variety of flavours, so invest in quality ingredients to really give it the best punch. It’s easy and super tasty! The bold flavours definitely won’t disappoint!

Mini Sausage Rolls with a Hazelnut-dressed Mixed Leaf Salad

Hello Everyone! A few days ago I decided to make sausage rolls just because I wanted to. You could argue though, why go through all the trouble to make your own when you can easily just by pre-packed frozen sausage rolls from the supermarket? I guess this way you can be a little bit more creative in what you want in your sausage rolls rather than the generic minced beef that supermarkets sell. You can basically wrap any sort of flavoured sausages in puff pastry (homemade or store bought, doesn’t really matter)! For today’s recipe, I went on and made myself some Mexican Chorizo with Caramelised Onion sausage rolls.

Chorizo, for those of you who don’t know, is a name given to a variety of sausages, both fresh and cured. The two most common types of chorizos are:

  • Spanish Chorizo – cured, or hard, sausage made from coarsely chopped pork. It has a deep, smoky flavour due to the heavy amounts of paprika in the spice mix. Also, it can be eaten without cooking because it has been cured.
  • Mexican Chorizo – ground, rather than chopped, and the sausage is fresh rather than cured. Also, the red colour comes from the spicy red pepper rather than the smoked paprika. It must be cooked prior to eating.

PREP TIME 20 MINS | COOKING TIME 15-20 MINS SERVES 24 ROLLS

INGREDIENTS

For the sausage rolls

  • 3 Mexican chorizo sausages, removed from casing
  • 2 sheets frozen puff pastry, semi-thawed
  • 1 large red onion, halved and then sliced
  • 1 egg, beaten
  • 1 tbsp milk
  • Sesame seeds
  • Knob of unsalted butter
  • Tomato sauce, to serve (optional)

For the salad (original recipe from Coles)

  • 1 packet (120g) Coles brand 4 leaf salad mix
  • 2 tbsp hazelnuts
  • 1/4 cup extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1/2 tsp white sugar
  • Ground sea salt and pepper to taste

METHOD

  1. Preheat oven to 200C. Roast hazelnuts on a baking tray for 5 minutes. Transfer to a clean tea towel and let to cool.
  2. In a medium pan, melt butter and sauté onions until soft and caramelised. Remove from heat and set aside.
  3. Cut puff pastry sheets into 8 rectangles (halved and 4 cuts across). Add about a teaspoon of sausage meat to one end of the rectangle and top with caramelised onions. Tightly roll the pastry around the sausage meat and brush the ends with the beaten egg and milk mixture to secure. Using the tips of the back of a fork, gently press down on the edges to seal the join.
  4. Space them out on a tray lined with baking paper. Brush the tops with the rest of the egg wash and sprinkle with sesame seeds. Bake in the oven for 15-20 minutes or until puffed, golden and cooked through.
  5. Meanwhile, return to the hazelnuts. Rub to remove the skins then roughly chop. Combine the oil, vinegar and sugar in a small bowl and season with a touch of ground sea salt and pepper. Stir in the hazelnuts. Place the salad leaves in a large bowl and add the dressing. Toss to combine. Serve with fresh out of the oven sausage rolls.
