Gingerbread Stained Glass Cookies

Hello Everyone! So today’s recipe was inspired by a video I watched on YouTube from one of my favourite channels SORTED Food. This recipe is by far one of my new Christmas favourites and spot on because this year for Christmas planned on decorating our Christmas Tree with food items! We strung some popcorn and wrapping them around our tree. We have candy canes, Ferrero Rochers, Lindt chocolate, and sugar cookie wreaths lined up as our ornaments:

I actually completely forgot about this recipe for Stained Glass Cookies until the night before Jialing and I had planned to make the cookies. It’s a good thing that we picked up the Turkey I preordered yesterday which meant that I could also pick up some boiled candy for this recipe! But I mean, does Australia have something against boiled sweets? Or did they just sell out or something? I swear I could not find any form of boiled sweets at the local supermarkets other than soothers or lozenges. Lucky for me that Woolies stocked their own home brand fruity sweets. But even so, the bag of candy only had 4 green sweets and half of the bag was filled with yellow sweets. So I ended up crushing some of the yellow with the green and added a few drops of green food colouring to it.

Initially I had planned to make my gingerbread cookies again for the tree, and since I have all the ingredients ready for some gingerbread making, I decided to do a little twist on their recipe and make Gingerbread Stained Glass Cookies. The first batch of cookies turned out to be a massive fail that they only deserved a before picture. Can’t even bare the look of the result after. Lesson learned? Don’t bake these stained glass cookies with raising agents in them – just don’t. I think you may have a picture in your head how these first batch of cookies turned out:

PREP TIME 30 MINS | COOKING TIME 12 MINS | MAKES 2 DOZEN

INGREDIENTS

  • 2 cups plain flour (plus 1/2 cup additional for rolling, if needed)
  • 85g unsalted butter, softened
  • 1 large free range egg
  • 1/2 lemon, juiced
  • 1 cup caster sugar
  • 1/4 cup dark molasses (or honey in my case)
  • 2 tbsp milk
  • 2 tsp ground dry ginger
  • 1 tsp ground cinnamon
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 teaspoon salt
  • Boiled Sweets (Hard Candy)

METHOD

  1. Preheat oven to 200C. Add the unsalted butter and sugar in a large bowl and beat using an electric mixer fitted with a paddle at medium-high speed until smooth; about 5 to 8 minutes.
  2. Meanwhile, in another bowl, sift together the flour, baking powder, baking soda, dry ginger, nutmeg, allspice, cinnamon, cloves, and salt. Whisk to blend and then set aside. In another bowl, whisk together the eggs, milk, molasses (or honey), and lemon juice.
  3. When the butter and sugar mixture is smooth, lower the speed of the mixer and add the wet ingredients. Then gently fold the dry ingredients until a dough starts to form.
  4. Divide the cookie dough in half. Wrap each half with cling wrap and chill in the fridge for about 15 minutes. This step will make it easier to finish rolling out the dough when it has chilled. It will also mean you only have half of the dough getting warm as you roll it.
  5. Lightly flour a flat surface. Use a floured rolling pin to gently roll the first half of the dough about 1/2-inch thick. Lightly flour the cookie cutter(s) and cut out your desired cookie shapes. Cut another shape out of the centre of each cookie and transfer the cookies to a lined baking tray.
  6. Chop up some boiled fruit sweets with a knife or by bashing them with a rolling pin whilst still in their wrappers, keeping the different colours separate. Sprinkle the chopped sweets into the hole in the centre of the cookies and bake them for 12 minutes.
  7. Leave to cool until completely cold before removing them from the lined baking tray. Ice them however you wish and thread a ribbon through the hole to hang your decorations. For these cookies, I made a simple vanilla icing to decorate with and edible silver balls.

Hello Everyone! Before I dive into today’s recipe, I just want to let you know that I may not be posting up a recipe next week Tuesday as I will be away from Saturday to Tuesday evening (I say ‘may’ only because depending if I can write up a post in advanced or even write one the night I get back, but may be to tired for that). This also means that Jialing and I won’t be having our fortnightly Muffin Making Monday because well, Monday I will be on a road trip back to base camp. I will be heading to the Red Centre of Australia exploring the rugged outback beauty and taking in all the richness in Aboriginal culture. For a person who loves adventure but hates camping, it’s going to be an experience, and I don’t know whether I am looking forward to or will regret looking forward to a weekend of 38-42 degree celsius weather over at Alice Springs/Uluru…

Double Chocolate Sea Salt Caramel Cookies

Anyway, you’ll probably hear more of that on next week’s post I presume, so let’s get back to the point of tonight’s post. So as you know from my previous post, Jialing’s actual birthday was on Tuesday. On Monday she came over and baked herself some birthday cupcakes, gluten free chocolate cupcakes I believe. Anyway, as usual, I didn’t want to just sit around and watch her bake, so I decided to bake too! Just something simple to kill time and something that I could easily take to work because I wasn’t keen on having them all to myself – and so I decided on baking some cookies. I wasn’t sure of what I wanted to make at first, until I stumbled upon Martha Stewart’s recipe for Double Chocolate Chunk Cookies. It was so convenient because I practically had every ingredient in my pantry, except of course the chocolate and I was a little short on cocoa powder as well. When I got to the chocolate/lollies section at Coles, I was unsure of what chocolate to get for the cookies. The original recipe uses milk chocolate, but I personally don’t really like milk chocolate – I like them dark… Just like my men (just kidding)! If you know me, I never fail to finish a sentence, be it my own or a friend’s, like that! Just as how I finish a sentence breaking out into a song if the first part resembles lyrics to a song I know. Anyway, got side tracked there, as I was browsing through the dark chocolates, I came across Lindt’s Sea Salt Caramel Dark Chocolate. I knew instantly that these bad babies are going into my cookies. And I’m glad I got them! They did not overpower the double chocolate flavour of the cookies, but instead they gave just a subtle hit of saltiness and oozy gooey caramel. Soft and moist on the inside, crunchy on the outside. I am actually salivating now just typing that!

Double Chocolate Sea Salt Caramel Cookies Ingredients

PREP TIME 10 MINS | COOKING TIME 15 MINS | MAKES 15 COOKIES

INGREDIENTS

  • 2 large free range eggs
  • 1 cup plain flour
  • 1 cup sugar
  • 1/2 cup cocoa powder
  • 200g Lindt Sea Salt Caramel dark chocolate (or any other kind of chocolate), 100g coarsely chopped, 100g cut into chunks
  • 100g unsalted butter
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt (optional)*

*The original recipe adds 1/2 tsp of salt, but because I am using a chocolate that already has sea salt in it, I lessened the amount of salt a little bit – or I guess depending you can ignore the salt completely. My cookies did not turn out to be very salty in the end anyway.

METHOD

  1. Preheat oven to 160C.
  2. Add the flour, cocoa powder, baking soda, and salt into a medium bowl and whisk together until combined. Set aside.
  3. Melt coarsely chopped chocolate together with the butter in a small heatproof bowl set over a pan of simmering water, or in the microwave for about 30-45 seconds. Stir to combine the mixture.
  4. In a large bowl, add the sugar, eggs, vanilla, and the chocolate mixture. Using a handheld electric mixer, mix on medium speed until well combined combined. Then reduce the speed to low and gradually mix in the flour mixture. Once combined, fold in chocolate chunks using a spatula.
  5. Scoop the batter onto a baking tray lined with baking paper (as Martha’s recipe goes, I used an ice cream scooper to measure out my cookie batter). Leave about a 2-cm gap between the cookies as they will flatten out while baking in the oven.
  6. Bake until cookies are flat and the surfaces begin to crack (about 15 minutes). Once done, remove from the oven, lift the baking paper from the tray and transfer the cookies to a wire rack. When you remove the cookies from the oven, you will notice that they are a bit soft – this is normal as they will start to firm up when they cool down. So be careful to not assume they are underdone and risk over-baking them.
  7. Let them cool for about 5-10 minutes. Cookies can then be stored in an airtight container at room temperature for up to 3 days.

I mean, just look at that caramel goodness trying to peak through the cracks! As I mentioned above, I brought these bad boys into work the next day and they were a crowd pleaser! My boss Max (who by the way, just got back from Bali that day and said he’d have half because he’s on a “diet”), had a whole cookie to himself and was practically having foodgasms. I don’t blame him, they were THAT good. Everyone in the office loved it, but not enough for a second helping, or maybe because they were just so sinful, they couldn’t bring themselves to have another – except for my community manager James. He was quick to ask for another cookie before he stepped into a meeting, and before I left for the day.

If you want to attempt making these cookies – I HIGHLY recommend the sea salt caramel by Lindt! Even if it’s just eating them on their own. Too good!

Hello Everyone! I would like to dedicate today’s post to my partner in crime, my matchy-matchy twin, and all round foodie & gym/boxing buddy, Maria the Mew (also known as Jialing), the happiest of birthdays! Happy Birthday my love, and I hope you had a most fantabulous day today! Hope you also liked my essay-like birthday card and present that I got for you 🙂

Though it wasn’t a particularly sunny day, we celebrated an early birthday on Saturday afternoon at Coogee Beach with lots of cake, dessert, drinks, and food. Oh and BARBECUE! Then ending the night at Beach Burrito Company with some margaritas and tequila. We also celebrated her birthday today by having dinner at Pizza e Birra on Crown Street at Surry Hills and having left over cake and flan for dessert.

So today’s recipe can originally be found on Better Baking Bible, and was actually baked by Jialing while I assisted in preparing the decorations for her cake. I also helped crush the hazelnuts and slap them on to the sides of the cake. On Friday night after work for the both of us, Jialing came over to my place to bake her cake while I made flan for her birthday celebration the next day. We actually started making stuff at around 7pm and seriously did not finish making her cake until about 1am. We honestly had no idea where all the time went – we didn’t even get to bake her quiche as planned originally. Well, we did have an hour and a half or so of a dinner break in between. I mean honestly, this is how I’ve spent two Friday nights in a row – baking until 1am (my birthday cake last week).

I also think time went into having to make another batch of cake batter and waiting for that to cool down as well. The original recipe actually says to split the cake into 2 even layers, however when we took the cakes out of the oven, they looked like an okay size for a single layer and would appear to be too skinny if we had sliced them in half. So Jialing decided to make another batch of batter for just one more layer to make a three layer cake (two is never enough, and honestly probably wouldn’t look as epic). I have adjusted the quantities from the original recipe specifically to Jialing’s cake, as well as adding extra ingredients such as hazelnuts into half of the frosting mixture.

PREP TIME 20 MINS | COOKING TIME 25-30 MINS | SERVES 8-10

INGREDIENTS

For the cake

  • 10 large free range eggs
  • 3 cups hazelnut meal
  • 3/4 cup granulated sugar
  • 4 tbsp cocoa powder
  • 4 tbsp plain flour
  • 4 tsp baking powder

For the frosting

  • 300g unsalted butter, softened
  • 2 & 1/4 cups dark chocolate, roughly chopped (or chocolate chips)
  • 1 & 1/2 cup wafer biscuits, crushed
  • 1/2 cup Nutella
  • 1/4 cup roasted hazelnuts, roughly chopped
  • 1 & 1/2 tsp vanilla extract

For decorating

  • 8 Ferrero Rocher Chocolates
  • 3/4 cups roasted hazelnuts, roughly chopped (some whole)
  • 1 packet (125g) vanilla wafers, crushed (reserve some whole)

METHOD

  1. Preheat oven to 180C. Butter three 8-inch round pans.
  2. Cake batter: In a large mixing bowl, sift together the flour, baking powder, and cocoa powder. Mix in the hazelnut meal and set aside. In a separate mixing bowl, whip the eggs and sugar using an electric mixer on high, for about 5 minutes (when it has tripled in size). Slowly mix in the dry ingredients into the egg mixture and then divide the batter evenly between the three pans. Bake for about 25 minutes or until a toothpick comes out clean when pierced. Remove from the oven and allow to cool for about 5 minutes before transferring to a cooling wire rack to completely cool down before frosting.
  3. Frosting: Add the chocolate to a microwave safe bowl and melt the microwave, stopping every few seconds to stir and prevent the chocolate from burning. Once melted, remove and allow to slightly cool to room temperature. Transfer the chocolate to a mixing bowl and whip together with the unsalted butter, Nutella, and vanilla extract until well combined. Take half of the frosting mixture and place it into another bowl and stir in the crushed roasted hazelnuts.
  4. Assembly: Place the wafer biscuits in a ziplock bag and crush them with a rolling pin. Place the first layer of the cake onto a round cake board. Spread with half of the hazelnut frosting mixture of the frosting and sprinkle with some of the crushed wafers. Repeat for the remaining layer.
  5. Decorating: Cover the whole cake and sides with the plain chocolate frosting. Press the roughly chopped hazelnuts onto the sides of the cake and decorate the top of the cake accordingly or however you wish to. Serve!

Hello Everyone and welcome back to reading another blog post! So this recipe was actually made (and consumed) yesterday, but I would like to take this opportunity to tell you all what the cake was for. Basically last week when Jialing and I were having our lava cake bake off session, Lydia asked if I was free next week (which was yesterday), to make a chocolate cake for her birthday (which is today, Sunday). So first off, Happy 21st Birthday once again to my housemate and friend, Lydia! So on Thursday, I was going through chocolate cake recipes to make, and I came across this one on Taste. Chocolate and Salted Caramel – the ultimate flavour sensation! Jialing, and most specifically the birthday girl, were happy with this selection. So Saturday morning, Lydia and I met up with Jialing at Kingsford, had a gigantic lunch, and then headed over to Maroubra Junction to do our grocery shoppings, and also of course cake ingredient shopping. While shopping – may I just point out, we saw a tub of ready made salted caramel. We debated over whether we should just buy one, and I made the call to just make our own caramel – I mean why not? We were already making the cake from scratch!

Got home and immediately started on the cake because we knew it was going to take a while. Of course, Lydia was on dry ingredient duty, Jialing took over the wet, while I helped Lydia with the dry. Popped the mixture in the oven, and then it was onto the salted caramel. Seriously, so many problems with this, but nonetheless, it tasted #amazeballs. Also, while I was working on this, Jialing and Lydia started to prep the frosting for the cake. Also, somewhere in-between all that, Vidhya, our acting supervisor (not really) sat around and watched the chaos unfold in the kitchen – okay she did help a little bit as well before going back to sleep again (after having just woken up from her slumber). It was then more or less time to take the cakes out of the oven, left to cool, and then assemble! We assembled the first two layers and then, disaster struck. Our top layer wasn’t cooked all the way through so we had to pop it back into the oven. Once we got it out of the oven, we still had to wait for it to cool down. While that was happening, we left everything to where it was and headed out to get a take out dinner. We were so engrossed in our cake making session that we totally forgot about dinner! So went to the Indian place nearby and got dinner for 6 – by then Abdullah, Marissa, and Vidhya (when she woke up) joined us.

We then assembled the cake. Once that was done and over with, we had Vidhya distract Lydia so that we could put candles on her cake (which by the way she was not expecting). It was hilarious because whatever Vidhya needed doing was basically a one-man job turned two/three person job just to keep Lydia distracted and away from the dining room for a bit. When she finally walked back into the dining room, she was SO happy and even had a little jump/skip when she saw the candles on her cake. Priceless moment. We then took photos, sang happy birthday, had more housemates join us, ate cake, drank wine, and had a good time. So yes, if you took the time to read all that, thank you! Layered Chocolate & Salted Caramel Cake Ingredients

PREP TIME 20 MINS | COOKING TIME 30-35 MINS | SERVES 8-10

INGREDIENTS

For the cake

  • 2 cups plain flour
  • 1 & 1/2 cups self-raising flour
  • 1 & 1/2 cups buttermilk
  • 1 & 1/4 cups caster sugar
  • 1/2 cup cocoa powder
  • 1/2 cup vegetable oil
  • 395g can caramel*
  • 4 free range eggs
  • 2 tsp vanilla extract (or 1 tsp if using concentrated extract)
  • 1 & 1/2 tsp sea salt rocks
  • 1 tsp baking soda
  • Sea salt rocks, to decorate (optional)

For the chocolate frosting

  • 400g dark chocolate, melted and cooled
  • 250g unsalted butter, softened
  • 1/2 cup icing sugar, sifted
  • 1/4 cocoa powder, sifted

*If you read all of the above before scrolling down to the recipe, I actually made my own salted caramel which I will be uploading the recipe to tomorrow (hopefully), so stay tuned for that!

METHOD

  1. Preheat oven to 180C. Grease three 9″ round disposable aluminium tins (we didn’t have cake pans to work with so we bought these instead, and since they came in a pack of three, we made a three-layer cake instead).
  2. Sift flours, sugar, cocoa, baking of soda and 1/2 teaspoon of salt into a large bowl. Add in the eggs, buttermilk, oil, vanilla extract, and 1 cup cold water. Combine using a spatula. Then, using and electrical mixer, beat the mixture over medium speed for 3 to 4 minutes or until the mixture is smooth.
  3. Divide the batter between the tins and bake for 30 to 35 minutes or until a skewer inserted in the centre comes out clean. Stand in pans for 5 minutes before turning them out onto a wire rack to cool.
  4. Meanwhile, gather ingredients for your salted caramel while waiting for your cakes to cook (if making from scratch).
  5. Chocolate Frosting: Whisk the cocoa powder and 1/4 cup of warm water in a bowl until the cocoa powder has dissolved. Meanwhile, using an electric mixer, beat butter and sugar until pale and fluffy. Beat in the melted chocolate, then cocoa mixture until combined.
  6. Using a serrated knife, trim tops of cakes. Then, transfer the base of 1 cake to a plate. Spread with 1/3 of the caramel. Top with another cake layer and spread with 1/2 of the remaining caramel. Repeat layering with 1 cake layer and remaining caramel mixture. Top with remaining cake layer. Spread top and sides of cake with chocolate frosting. Serve!

You can’t really see the layers of caramel in-between because while we were assembling we realised that the top layer wasn’t cooked all the way through. So while waiting for that to bake away in the oven, on top of getting take out and eating dinner, the caramel that was on the other layers of cake either seeped into the cake or dripped over the sides. Sad times, but still oh so decadent in flavour!

Hello Everyone! Back with another recipe for you! I know right? It’s a weekday and she’s actually uploading a post? If you read yesterday’s post, I mentioned that I had a baking session with my good friend/lover Jialing. What happened was that she was feeling bait down that she couldn’t do the internship that she really wanted due to requirement issues with our University – and so she contacted me and basically wanted to bake a chocolate lava cake to drown her sorrows in. So, we decided to do that! I suggested that we make a red velvet lava cake – drooled instantly as I made that suggestion. So Sunday we met up at the grocers and bought our ingredients for it. While shopping, Jialing decided that she wanted to make a dark chocolate lava cake, and bought ingredients for those too. Lava cake bake-off!

This was my first time trying out this recipe and I don’t particularly like making lava cakes because I always end under either undercooking it, or overcooking it until it’s rock solid and dry. Jialing’s dark chocolate lava cakes were slightly overdone and not very molten, while mine on the other hand were slightly undercooked – the sides were perfect, but the tops (as in when you invert them) weren’t cooked at all, even when they were in the oven for the maximum amount of time they should be in. Nonetheless taste and texture were spot on – and in my opinion made the presentation of the dish more dynamic! Please check out the original recipe on The Dinner Pages. I SO wanted to make the cream cheese ice cream, but I didn’t have an ice cream maker so I mean, store bought Cadbury vanilla ice cream did wonders as well anyway!

Red Velvet Chocolate Lava Cake Ingredients

PREP TIME 10 MINS | COOKING TIME 15-18 MINS | SERVES 4

INGREDIENTS

  • 1 cup white chocolate buttons
  • 85g unsalted butter, plus extra for greasing
  • 1/2 cup plain flour
  • 1/3 cup white sugar
  • 1/4 cocoa powder
  • 2 large free range eggs
  • 2 tsp red food colouring
  • pinch of salt

METHOD

  1. Preheat oven to 200C. In a microwave safe bowl, melt the white chocolate and butter until smooth, at intervals of 20-30 seconds to prevent the mixture from burning (approximately 2 minutes altogether). Grease the moulds with the extra butter.
  2. Add in the cocoa powder and sugar to the white chocolate and butter mixture. Stir until well combined.
  3. Beat the eggs in a medium-sized mixing bowl. Add in the chocolate mixture in small amounts, stirring together to allow the eggs to warm slowly (temper) and avoid scrambling. Add in the remaining chocolate batter in small amounts as well and stir until fully combined.
  4. Stir in the red food colouring, flour, and pinch of salt until well combined. Then divide the batter amongst the 4 well greased moulds (should go up to about 3/4 of the way).
  5. Bake for 15 minutes (or as I found that my cakes didn’t quite cook at the top, add an extra 2 minutes, maybe).
  6. Remove from the oven and run a knife around the edges right away. Invert each mould onto an individual serving plate and let sit for 2 minutes, then carefully lift up the mould. Top with vanilla ice cream to serve.

Hello Everyone! Here is another brunch turned late lunch review of this lovely café in Surry Hills that my housemate/friend recommended for a Sunday Brunch treat before the beginning of Semester 2 (last semester for me, but many more semesters for her). We’ve also been planning this brunch outing for a while now as our friend Daniel was on a month-long, or even more, holiday and we wanted to have our first brunch-turned-late-lunch get together. I also invited along my new housemate Lydia for our delicious eats.

I keep saying brunch-turned-late-lunch, and for those of you who have read my previous post, I am very particular about the timing when it comes to ‘brunch’ and ‘lunch’. Well hats off to Marissa for wanted to get to Rustic Pearl at 10am, at least she understood the concept of time when it comes to brunch, but what happened was that we ended up leaving a little bit later than planned. We only left home at about 10:45AM and probably reached the place at around 11:15AM. At least it wasn’t quite lunch yet, but nearly pushing it. The place was hectic though, we had to wait in line for a table and I was told by one of the waiters that it would be about a 45-minute to an hour wait. I was just like OH MY GOD, but we waited anyway.

They were pretty spot on with the predicted waiting time as I didn’t get a call for a free table until about an hour later. By the time we sat down and ordered it was probably already quarter to one, and food probably came out about another 15-20 minutes later. Man I was starving because as usual I skipped out on breakfast thinking that I would be having brunch. I think from the past two ‘brunch’ outings I have learnt my lesson – that I will NEVER be able to actually have brunch at the time I perceive it to be at, and that I should ALWAYS have breakfast before going out for a brunch-turned-late-lunch outing.

But enough babble, I shall get onto what I loved about Rustic Pearl. Now, I’m not one to order drinks at cafés just because it usually fills me up a bit even before the food arrives. But Marissa told me that they have some pretty awesome smoothies, and other drinks of course on their menu – and she was right! It was to die for! I had something called a Chocomolé which was basically Avocado and Chocolate, something I’ve never had before, combined that is, and I was just blown away by how amazing it tasted. The other smoothies were delicious as well (yes, we all doubled dipped and shared a sip from each drink that we ordered amongst the four of us).

Daniel wasn’t too fond of this drink. I only had a little sip so I couldn’t really judge the taste of it based on that. But this was the only smoothie that was dairy-free which is why he ordered it.

Now onto the food, we of course decided to order something different so that we could all each have at least one bite from everyones plate. The food was amazing! I could not fault the dishes at all, and neither could my friends.

Marissa’s dish; she absolutely loved about the omelette was silky smooth and juicy. She is not a big fan of cherry tomatoes, but with this dish in particular, she almost forgot that she ate them! It was that good. She said that it looked a little bit small on the plate (in comparison to our dishes) but it was filling enough for her.

Daniel’s dish; he absolutely loved how his fish was cooked to perfection. Yummy and juicy. He also loved his greens so this was the perfect, healthy dish for him.

Lydia’s dish; another stellar dish that did not upset. The meat patty was cooked to perfection – moist and juicy.

In my opinion, the best dish of the 4 (just because it was mine and I got to eat most of it) no but seriously, this dish was just so delicious. Runny egg yolk with char grilled lobster, who would’ve thought? Another stellar dish to my list of mind-blowing eggs benny (my top one is still Devon’s Eggs Blini – I will do a review on them when I have the chance to go back with more friends that that I have an array of dishes to show and write about and not just the one).

Now this is one worth mentioning (but hopefully no one from the café will see this, just incase it was a mistake and they will get in trouble with this), however I assume that it was intentional and I will state why… So, when the bill came, it was folded in half, had the total amount written on the back of the order sheet, and had a ‘Thank You!’ note written just below it. Now of course because we all knew that we needed to split the bill according to what we ordered, I opened the bill to see that we were undercharged in two of the dishes. Each dish, except Daniel’s was $17. Which meant that Lydia’s Lamb Burger was undercharged by $1 and my lobster Eggs Benny was undercharged by $7… Now being a nice and honest person, I was actually going to ask them if they had made a mistake on the bill, because I find being undercharged $7 is quite significant.

But instead I didn’t – not because I wanted to cheat but because I analysed they way the bill was given to us. It was folded in half, the total was written on the back of the order sheet, and I’m pretty sure that if they had totalled it, they would’ve spotted the mistake on the bill. Also, the two dishes that were undercharged came from their regular menu so I’m pretty sure they have been serving the dishes for a while and they would’ve remembered how much it costed. So I just wondered… Why? I probably should’ve asked why we were undercharged so that I at least knew why… A part of me also thought that it might be because we waited just a little bit over an hour for a table? Just maybe.

Nonetheless, it was a great day of warmth and sunshine (off for it is the middle of ‘winter’ here down under), laughs shared between old and new friends accompanied by delicious drinks and lip-smacking food. A must visit café for those in the Sydney region!

Today (May 1st) as you can see, is my mother’s birthday. Unfortunately for the past four years, I have not been able to celebrate with her and the family back home being away for university. But today I decided to bake her a cake, a chocolate lava cake. A diabetic-friendly chocolate lava cake. For her birthday. Even though she’s not here to eat it.

I initially looked at this recipe by theurbanbaker but changed the portions slightly to make 2 chocolate lava cakes (I had to eat them all in the end since my Mom isn’t actually here to eat it with me, and 4 seemed a bit too much to handle for me).

Diabetic-friendly Chocolate Lava Cake

PREP TIME 10 MINS | COOKING TIME 6-7 MINS | MAKES 2 CAKES

INGREDIENTS

  • 3 tbsp unsalted butter, plus extra for greasing the ramekins
  • 50g Nestlé 70% cocoa dark chocolate for cooking, chopped
  • 1 large egg
  • 1 egg yolk
  • 1 tbsp granulated sugar substitute (in this case I used Equal)
  • 1 tsp plain flour
  • Unsweetened cocoa powder for dusting

METHOD

  1. Preheat oven to 230C. Grease the ramekins with room temperature butter and light dust with sifted cocoa powder.
  2. Add the chocolate and butter to a small bowl. Melt in the microwave for about a minute. Stir until smooth.
  3. In a medium bowl beat the egg, egg yolk and sugar substitute together until lightened in colour and thickened. Add the chocolate mix and stir until smooth and combined. Stir in the flour and divide between the ramekins.
  4. Bake for about 6-7 minutes. The sides will be cooked but the centre will be soft.
  5. Invert onto a plate and wait 10 seconds before sliding the ramekin off. The cake will fall into place. Light dust with confectioners sugar, garnish with a strawberry and serve with a glass of chilled St. Andrew’s Pink Moscato (optional).
