Hello Everyone! Wishing all my family, friends, followers, and passersby a Happy New Year! I hope everyone had a good Christmas and New Year’s break to refresh, rejuvenate, and reflect asides from celebrating. I hope 2022 will be a better year for all of us.

For those who have been following my blog for a while now, you’ll all know that I always set a theme for the year. This year will be a little bit different. I won’t be setting a specific theme only because I have a backlog of recipes that I created last year but did not have a chance to post it on my blog. Rather than have it sit in my archives, I decided that I’ll spend the first few months of the year getting them up on the blog.

To kick off the new year, I will be sharing my recipes that I whipped up for the King Chef 2021 Challenge last year, starting with this non-traditional bruschetta recipe using mantou buns. We could create anything and everything as long as it featured any ingredient/product from Lee Kum Kee and King Chef, from the challenge kits provided.

Mantou Bruschetta

Like with many of my ideas, this Mantou Bruschetta came into mind while I was in the shower. For those who aren’t familiar with bruschetta, it is an Italian starter dish that consists of grilled bread that has been rubbed with garlic, and then topped with olive oil and salt. There are many variations for toppings, but the most popular and most known one outside of Italy is a mixture of basil, fresh tomato, garlic, onion, and mozzarella.

Traditionally, the best choice of bread for bruschetta is an Italian or French loaf – preferably a loaf of bread that has a thick crust and firm consistency. In fact, the dish was developed as a way of salvaging bread that was going stale. Though mantou buns don’t have either of those characteristics, I thought that I could use them as an option for this recipe. Now, As you can see in my photos, I may have pan-toasted them a little bit too much as they turned out to be darker in colour than I wanted them to be. It all worked out in the end in terms of flavour though; the browning gave the mantou bun slices an extra nutty flavour that complimented the sweetness of them.

Now that I got the King Chef product sorted out, I thought hard about what Lee Kum Kim product to incorporate from the challenge kit provided – between premium soy sauce or hoisin sauce. Since soy sauce is salty in taste, I decided to add this to the tomato topping for my bruschetta. So here’s my Chinese-Italian fusion of Mantou Bruschetta; it’s light and fresh, yet tangy and intense at the same time from the balsamic vinegar glaze. It is also sweet and nutty, making it the perfect antipasto to serve at your next dinner party!

Mantou Bruschetta Ingredients

PREP TIME 1 HOUR | COOKING TIME 5 MINS | SERVES 2-3

INGREDIENTS

For the mantou bruschetta

  • 4-5 pcs King Chef’s mantou buns, cut into 1-inch thick slices
  • Olive oil
  • Salted butter (or margarine)

For the tomato topping

  • 4 small-sized tomatoes, deseeded and chopped
  • 2 garlic clove, finely minced
  • 1 small red onion, diced
  • Handful of basil leaves, roughly chopped
  • Cracked black pepper, to taste
  • 1 tbsp extra virgin olive oil
  • 1 tsp Lee Kum Kee’s premium soy sauce
  • Balsamic vinegar glaze, to garnish

METHOD

  1. Tomato Topping: Add all the ingredients in a medium-sized bowl and mix until well combined. Set aside to chill in the fridge for at least an hour before serving.
  2. Mantou Bruschetta: Melt butter with a little bit of olive oil in a small non-stick pan over medium heat. Toast each side of the slice until browned to your liking. Once done, remove from the pan. Work in batches if needed.
  3. Plate up by topping each toasted mantou slice with about a tablespoon of the tomato mixture. Drizzle with some balsamic vinegar glaze, and top each with a small basil leaf. Serve and enjoy immediately.

Hello! My name is Karina, the girl behind wander little girl on Instagram. Two years ago, I initially started my food blog to document my #foodjourney—basically a marriage between transitioning to a healthy lifestyle (which was then a strictly plant-based diet) and learning my way around the kitchen. Fast forward to the present, a few things have changed, from my perspective on health and wellness to the direction of my blog. I decided to see wander little girl as a serious brand and grow it (especially now that we’re in the midst of a global pandemic).

At one point within that two-year timeline, Allison and I followed each other. Though we hardly interacted with one another, it was when she opened slots for this year’s Auguest series that we began to communicate.

When Allison told me the chosen theme and the recipe guidelines, I was thankful for having seen and grabbed the opportunity to guest in this series. Titled Colors of the Rainbow, participating guests (or should I say, Auguests) were tasked to come up with a vegan, vegetarian, or pescatarian recipe in line with their assigned color. For me, this served as a walk down memory lane, back to wander little girl’s roots.

Adlai Tomato Risotto

Having picked the color red, I challenged myself to cooking beyond my comfort zone, hence Adlai Tomato Risotto. I had never made risotto prior and I wanted to add a few twists to the beloved dish. First, the risottos that I’ve tried are usually creamy, and so I whipped up a tomato-based version; that way, it would scream bloody RED! Next, I veganized it by using vegetable broth made from scratch and vegan margarine. Last (but definitely not the least), I swapped rice (specifically arborio rice) with adlai. Before anything, please hear me out! Since I live in the Philippines, I wanted to promote a grain that was both locally produced and a healthier alternative. Since adlai absorbs more than the regular white rice here, this Adlai Tomato Risotto is just as creamy and thick as its traditional counterpart! The entire process from preparing to cooking may be tedious and time-consuming, but I promise that the hard work is worth it; it’s like a dish straight out of an Italian restaurant!

Adlai Tomato Risotto Ingredients

PREP TIME 45 MINS* | COOKING TIME 30 MINS | SERVES 4-5

* Includes making of the vegetable broth

INGREDIENTS

For the adlai tomato risotto

  • 1 cup uncooked adlai
  • 1 & 1/2 cup of canned diced tomatoes
  • 2 tbsp tomato paste
  • 1 & 1/2 tsp olive oil
  • 1 & 1/2 tsp vegan margarine or spreadable
  • 1 tsp rosemary (+ more for topping)
  • 1 tsp thyme (+ more for topping)
  • 3-4 cloves of garlic
  • Half a white onion (or less, depending on your taste)
  • Sliced mushrooms
  • Ground pepper
  • Spanish paprika
  • Brown sugar (optional)

For the vegetable broth

  • 6 cups water
  • Chosen vegetables (in picture: carrots, stems of sweet potato leaves, garlic, and ginger)
  • Ground pepper
  • Salt

METHOD

  1. Vegetable Broth: Gather the vegetables to be used for the broth and place them in a pot. Add ground pepper and salt to taste. Pour 6 cups of water into the pot. Allow it to boil on a stove top for 30 minutes. Set it aside afterwards.
  2. Adlai Tomato Risotto: Mince garlic cloves and half a white onion. Heat a pan on the stove top. Add olive oil. Sauté the minced garlic and onions. Add margarine to enhance the flavor.
  3. Pour the cup of uncooked adlai, and cook it until slightly toasted. Start with a bit of the vegetable broth from earlier (I used a ladle and poured two servings) and stir it. Once the broth has been absorbed, pour another portion again. Repeat the process until all of the vegetable broth has been used and the adlai is cooked.
  4. Add sliced mushrooms. Pour diced tomatoes and tomato paste. Mix well until everything is incorporated and evenly colored.
  5. Sprinkle the herbs (i.e. rosemary and thyme) as well as the spices (i.e. ground pepper and Spanish paprika). Add brown sugar to taste, but this step is optional. Continue to mix everything.
  6. Once cooked, allow the risotto to cool. Transfer it into a large plate or bowl. Top it with more rosemary and thyme. Eat the risotto on its own or pair it with corn. Enjoy!

Tonight I will be sharing a delicious and healthy dish that is packed with the flavours of roasted garlic, chilli, and balsamic vinegar. You can easily whip up for a quick weeknight dinner if you’re pressed for time!

Roasted Garlic & Onion Tomato Tagliatelle with Butter Beans,Tuna, and a Chilli Balsamic Drizzle Ingredients

PREP TIME 10 MINS | COOKING TIME 20 MINS | SERVES 4

INGREDIENTS

For the tagliatelle

  • 200g dried tagliatelle pasta
  • 1 can (approx 400g) butter beans, drained
  • 1 can (approx. 185g) tuna in olive oil
  • 1 can (approx. 400g) roasted garlic and onion tomato pasta sauce
  • 4 garlic cloves, minced
  • 4 shallots, minced
  • 2 red bird’s eye chillies, minced
  • 1 tsp sweet ground paprika
  • Salt and freshly cracked black pepper, to taste
  • Parmesan cheese (optional)

For the chilli balsamic drizzle

  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 red bird’s eye chilli, minced
  • 2 tbsp balsamic vinegar
  • 1 tsp fresh parsley, minced
  • Salt and freshly cracked black pepper, to taste

METHOD

  1. Chilli Balsamic Drizzle: In a mortar and pestle, grind the garlic, chilli, and parsley together. Add the olive oil, balsamic vinegar, and season with salt and pepper to taste. Adjust to your liking and set aside.
  2. Roasted Garlic & Onion Tomato Tagliatelle: In a large pot with boiling salted water, cook the tagliatelle pasta according to packet directions or until al dente. Drain and set aside, reserving about half a cup of the pasta water.
  3. In a separate pan over medium-high heat, sauté the minced garlic, shallots, and chilli until golden, fragrant, and translucent, about a minute or two.
  4. Add in the drained butter beans together with the tuna in olive oil and cooked until warmed through. Add the ground paprika and season with salt and pepper to taste.
  5. Stir in the canned tomato pasta sauce plus the half cup of reserved pasta water. Bring to a rapid simmer before adding the cooked pasta. Once done, transfer to individual serving plates.
  6. Top with parmesan cheese if desired, fresh arugula or any other leafy greens you prefer, and drizzle with the chilli balsamic mixture. Serve and enjoy!

Rustic Bread: Pizza Toast

Hello to all amcarmenskitchen’s readers! I am Wendy, a petite woman in my mid 20s; and of course, I love baking and cooking. For me, spending time in the kitchen is just so therapeutic and satisfying, especially when you get to enjoy the food you’ve made after long hours of preparation. Additionally, I have this motherly instinct to feed people with a lot of food, and whenever someone tells me that the food that I make is delicious and would like to have it again next time around, I feel like I’ve won the title of Brunei’s MasterChef!

I recently started up a blog known as Peek A Pastry, however I haven’t been very active in updating it. I still cook and bake frequently, and have posted a few of my successes in the kitchen over on my Instagram page – @peek.a.pastry. Ally was actually the one who encouraged me to take the first step in opening up a blog, and so I did even though I simply just couldn’t commit to it. After given the opportunity to write down my recipes for Ally’s blog for my guest posts for this month, I got the feel of what it was like to write for a blog and this might very well the kick I need for me to start penning down my recipes and actually write!

Before I share with you my savoury breakfast idea in the form of a Pizza Toast, I’m going to share with you my recipe for Rustic Bread as the base for this toast. Of course, feel free to get store-bought bread too. Note: bake your bread the night before so that you’ll have it ready for a quick brekkie fix the next morning!

Rustic Bread

Rustic Bread: Pizza Toast Method

PREP TIME 2 HOURS 30 MINS* | COOKING TIME 50 MINS | MAKES 1 LOAF

*Allow for an additional 12 hours for dough to rise overnight

INGREDIENTS

  • 3 & 1/3 cups plain flour
  • 1 & 1/4 cups water, at room temperature
  • 2 tsp of salt
  • 1/8 tsp yeast
  • 1/2 cup boiling water (when baking)

METHOD

  1. In a large bowl, mix the plain flour, salt, and yeast together until combined. Slowly add in the room temperature water into the flour mixture until the dough starts to become sticky, just like the texture of slime. It’s okay to have a little bit of lumps in the mixture, but make that it is not too lumpy. Cover the bowl with cling wrap and let it rest at room temperature for about 20 minutes.
  2. After 20 minutes, fold the dough by wetting your hands and scoop them by the edge; palm facing you and fingers under the dough, pull it upwards and flip it across, as if you are helping a baby with his or her napkin. Pull and flip for about 5 times in total for every edge of the dough in the bowl. Set aside and let it rest for a further 20 minutes and repeat this action for another 3 times (four folds in total). Along way, your dough will rise a little, but not too much.
  3. After the fourth and last fold, rest the dough for 12 hours overnight.
  4. After 12 hours the next morning, you will see that your dough has risen and bubbling like crazy! Place a piece of parchment paper over a baking tray and lightly sprinkle a bit of plain flour atop as well as on the dough.
  5. Scrape the edges of the dough with your fingers so they will come out from the bowl easily and onto the parchment paper. Sprinkle some more flour on top of the dough and start to fold again.
  6. Start shaping the dough by cupping the bottom of the dough. Cup and twist until you get a nice round shape. At this point your dough should be feel supple and bouncy. Use your finger and slightly press on the dough and release. It should recover back to its initial shape instantly.
  7. Grease a large clean heatproof bowl and transfer the dough, together with the parchment paper underneath it to the bowl. Cover using a clean kitchen towel and let it rest in the bowl for another 50 minutes before baking it.
  8. Preheat the oven at 230C (450F or gas mark 8), add the boiling water into a small heat-proof bowl and place into the oven. Then place dough in the bowl into the oven and bake for 50 minutes.
  9. Once done, remove the bread from the oven. Remove from the bowl and leave to cool down for at least an hour on an elevated rack before slicing into it. Brush off excessive flour on top.

Rustic Bread: Pizza Toast

PREP TIME 5 MINS | COOKING TIME 15 MINS | SERVES 3-4

INGREDIENTS

  • Diced red onions
  • Mayonnaise
  • Parmesan cheese
  • Pineapple bits
  • Rustic bread slices
  • Tomato paste
  • Tuna chunks in olive oil (or you can use any tuna you want)
  • Unsalted butter

METHOD

  1. Spread the butter generously at the sides of the bread to give it a crunchy bite.
  2. Smother the tomato paste at the centre of each slice and start rustically building up all your toppings. Put as much as you like – I like to put tuna first then pineapple bits, followed by the diced onions. Season it with Parmesan cheese and finish it off with dollops of mayonnaise here and there. Bake them for about 15 minutes at 240C (475F or gas mark 9).
  3. Once done, serve and enjoy with a hot cup of coffee!

Rustic Bread: Pizza Toast

I am a savory person and I love everything savory. It might be because I’m Hakka (one of the Chinese dialects). Just to give you a little bit of imagination when you bite into this toast, let me paint a picture of it for you. Imagine as you take that first bite into the crunchy edge of the toast before everything else, and then you a change of texture to the chewy and savoury bread. Followed by all of the topping in that single bite; the umami and flaky tuna, the crunchy, spicy and sweet diced onions, the richness of the slightly burnt dollops of mayonnaise that sort of just melt in your mouth, engulfing everything together. Then here come the sweet and juicy pineapples, cutting through all the richness happening in that tiny space. You start over again as you take another bite to experience this rich and salivating moment!
