Hello Everyone! It’s been a quiet and boring week to be honest, and I having a serious holiday withdrawal syndrome. I miss the lush greenery of Temburong, crystal clear waters, physical activities, and the sun piercing through your skin – giving you a tan that you’re proud to wear for the next couple of months because it reminds you of the fun times you had. But in all honesty, I just miss going on weekly adventures; a new hike trail every weekend to rejuvenate from the work week. It doesn’t even need to be a holiday, just a 2-day weekend where one of them can be spent going out and exploring, and the other to do chores, cook up a storm for Amcarmen’s Kitchen, and basically recover from the working week. Back in Australia, this was easy to do because there were plenty of trails to explore. Here in Brunei, not so much – and not much of great views too, and the fact that I only have a 1-day weekend.

All that aside, I have a bit of a unique smoothie bowl to share with you guys tonight; and I say unique because I’ve never thought of using these flavours (and spices) in a smoothie before. I mean, besides using spicy chai tea leaves and cinnamon in my Spicy Chai & Banana Cinnamon Smoothie from a while back, that’s pretty much the extent of me using spices in my smoothies.

The link to the original recipe can be found over on My Life Cookbook by Denise. She drew inspiration from ‘Golden Milk’ which, for those of you who don’t know, is basically a combination of turmeric, coconut milk (or oil), and black pepper. This Golden Turmeric Chai Smoothie Bowl is an aromatic, flavour-popping combination of golden milk and chai tea – perfect for an immune system boost if you’re feeling a bit under the weather, but also a quick, easy, and healthy breakfast to go!

PREP TIME 5 MINS | COOKING TIME  | SERVES 1

INGREDIENTS

For the smoothie mixture

  • 1 cup coconut milk
  • 2 large bananas
  • 1-2 tbsp honey
  • 2 tsp fresh ginger, grated
  • 1 tsp cinnamon powder
  • 1 tsp turmeric powder
  • 1/2 tsp black pepper, ground
  • 1/2 tsp cardamon, ground
  • 1/2 tsp nutmeg, grated

Toppings

  • Chia Seeds – contains omega-3 fatty acids, fibre, antioxidants, iron, and calcium
  • Goji Berries – excellent source of antioxidants and nutrients that help boost the immune system and protect the body from high levels of inflammation
  • Raspberriesgood source of vitamin C, E, K, manganese, dietary fibre, copper pantothenic acid, biotin, magnesium, folate, omega-3 fatty acids, and potassium
  • Desiccated Coconut

METHOD

  1. Blend the bananas, coconut milk, honey, ginger, and spices altogether until smooth.
  2. Transfer to a bowl and top with the raspberries, chia seeds, goji berries, and desiccated coconut. Enjoy for breakfast or an immune-boosting afternoon snack!

Avocado & Spinach Smoothie Bowl

Hello Everyone! So yesterday my friend, who is visiting from New Zealand, and I went on a day-trip adventure to the pristine rainforest district of Brunei. We took a 45-minute boat ride from the city centre to the small town of Bangar in Temburong where we then travelled about 20 minutes by car to the Freme Rainforest Lodge where we had some local delights for our morning tea before setting off again on a 45-minute longboat ride to the Ulu National Park.

We climbed almost a thousand steps to get to the forest floor of the canopy walk, and then scaled a total of about 60m to the highest tower above the tallest trees of the luscious green rainforest. Even with multiple layers of sunblock, we were red from the scorching sun and we definitely worked our calves and derrières as we felt our legs shake when climbing back down to head to the mini waterfall for a nice cooling dip. The water was refreshingly blue but had fishes that weren’t afraid to nibble on you. They were the fish spa kind of fishes that really just wanted to nibble on your dead skin, but the fishes were much bigger that the little ones that you find at fish spas, so their bite was a little more scary.

Ulu Temburong National Park Adventures

After we cooled down, we headed back out on a longboat to the starting point of our kayak ride. On the way back down the crystal clear waters we spotted two freshwater crocodiles by the riverbanks – and apparently that didn’t seem to make us second guess our kayak ride back to the lodge. After our relaxing (or should I say, workout for our arms), kayak down the river, we got changed into dry clothes and had our late lunch. We were supposed to go zip-lining after but because it started to pour, we weren’t allowed to. Such a bummer though because apparently it hadn’t rained in Temburong for the past week, and it decided to as we were about to do our final activity before heading back to the main city. All-in-all it was a fun-filled day of nature and adventure – things that we both enjoy.

Anyway, I just wanted to share this little adventure for everyone before I dive right into tonight’s recipe for a lovely green smoothie bowl to match our little nature adventure from yesterday. You can switch out the low-fat milk to almond milk or coconut water, and the honey for agave nectar or maple syrup for a vegan alternative.

INGREDIENTS

For the smoothie mixture

  • 1 cup spinach leaves
  • 1 cup low-fat milk
  • 1 large banana
  • 1 small avocado
  • 1 tbsp honey

Toppings

  • Bananas – loaded with essential vitamins and minerals such as potassium, calcium, manganese, magnesium, iron, folate, niacin, riboflavin, and B6
  • Chia Seeds – contains omega-3 fatty acids, fibre, antioxidants, iron, and calcium
  • Goji Berries – excellent source of antioxidants and nutrients that help boost the immune system and protect the body from high levels of inflammation
  • Granolacontains vitamins, minerals, and other essential nutrients, including, but not limited to, dietary fibres, sodium, potassium, zinc, phosphorus, magnesium, calcium, vitamin C & E, niacin, iron, and thiamin
  • Kiwis – loaded with vitamins and minerals such as Vitamins A, B6, B12, E, and potassium, calcium, iron, and magnesium
  • Raspberriesgood source of vitamin C, E, K, manganese, dietary fibre, copper pantothenic acid, biotin, magnesium, folate, omega-3 fatty acids, and potassium

METHOD

  1. Blend the spinach, milk, banana, avocado, and honey until smooth.
  2. Transfer to a bowl and top with the raspberries, kiwi slices, chia seeds, granola, goji berries, and banana slices. Enjoy for breakfast or a power-boosting afternoon snack!

Hello Everyone! First of all I would like to wish all my friends and followers of Amcarmen’s Kitchen a very belated New Years as this is the very first post that I am writing since 2018 started. Yes, I am aware that I have been MIA for the past few months, and I do apologise for that. I’ve just had a lot to juggle for the past month – mainly work life took over, mixed with a bucketload of emotional rollercoaster rides, and procrastination that led me to neglect Amcarmen’s Kitchen. But I’ve finally gotten back into my cooking and I’ve never been happier to do what I love doing best, and that is making a mess in the kitchen to come up with amazing eats!

The theme for this year revolves around what I foresee my future boutique café menu to carry – which is Breakfast… ALL DAY – Breakfast for Breakfast, Breakfast for Lunch, and of course the best part, Breakfast for Dinner. I was inspired by a restaurant called Wild Honey if I’m not mistaken, that I went to in Singapore a few years back, where they served an All Day Breakfast menu. My friend and I went there for dinner and I cannot express how much I enjoyed a Smoked Salmon Eggs Benny for dinner. I mean, it wasn’t the first time I had breakfast for dinner; in fact, I’ve had my fair share of them at home during my uni days where I had nothing in the fridge but breakfast ingredients which always usually resulted in a plate of buttered toast, sautéed spinach, sunny side up eggs, fried bacon, and on the rare occasion, that is if there were any leftovers in the fridge from the previous day(s), some sweet potato mash. Yes, this is taking me back to a specific night (possibly 6 years ago OH MY), that I spent at home all alone, going through a Big Bang Theory marathon, and having my breakfast for dinner. Those were the days.

So yes, the theme for Amcarmen’s Kitchen this year will be all about Breakfast or Brunch eats as both are my favourite parts of the day and I honestly think that they should be eaten all day everyday! For the month of March and April, I’ll be tackling some healthy smoothie bowls for a quick-and-easy go-to breakfast or afternoon snack packed with nutrients that will keep you energized all day long. They have the taste and texture of a smoothie, but with health-boosting, super-satisfying toppings such as granola, flaxseed, chia seeds, fresh berries, coconut, or even a little bit of dark chocolate to turn them into a heartier meal. Aside from being delicious, whipping up a smoothie bowl is a great opportunity to get creative. The possibilities are endless!

Tonight, I will be sharing with you a ‘Strawberries & Cream’ inspired Smoothie Bowl. Double the ingredients if you wish to make a smoothie bowl for two.

Strawberries & Cream Smoothie Bowl Ingredients

PREP TIME 5 MINS | COOKING TIME | SERVES 1

INGREDIENTS

For the smoothie mixture

  • 1 cup frozen strawberries
  • 1/2 cup vanilla yoghurt
  • 1/4 cup low-fat milk
  • 1 tbsp honey
  • 1 tbsp chia seeds

Toppings

  • Blueberriescontains vitamin C & K, fibre, manganese, and other antioxidants
  • Chia Seeds – contains omega-3 fatty acids, fibre, antioxidants, iron, and calcium
  • Cornflakes – contains vitamins, folate, minerals, dietary fibre, proteins, and also carbohydrates
  • Fresh Strawberries – contains vitamin C, folate, potassium, manganese, dietary fibre, magnesium, antioxidants, and polyphenols
  • Honey-roasted Almonds – contains healthy fats, fibre, protein, magnesium, and vitamin E
  • Pumpkin Seeds – contains magnesium, manganese, copper, protein, and zinc

METHOD

  1. Blend the strawberries, yoghurt, milk, honey, and chia seeds together until smoothie.
  2. Transfer to a bowl and top with the cornflakes, fresh sliced strawberries, blueberries, almonds, pumpkin seeds, chia seeds, and a drizzle of honey.

If you don’t have all these toppings on hand, then don’t fret! Just use what you have on hand. Like I said before, whipping up a smoothie bowl is an opportunity to get creative and top them with your favourite fruits, seeds, nuts, and grains!

Hello Everyone! I hope everyone had a great weekend – or at least better than my week/weekend. We just wrapped up two back-to-back events that was ideally supposed to be a 3-month preparation scale type of event, but because of the last minute go signal from the client, a 3-month preparation schedule became the impossible of a 6-day preparation schedule. This meant a lot of late nights in the office and onsite for our team, losing our sanity, and on the verge of mental breakdowns… But we survived and delivered. It was indeed an intense week, everything had to be perfect down to the very last detail as our Guest of Honour for the first event was the Governor of China and for the second event was the Crown Prince of Brunei. Despite the intensity and late nights, I have fully recovered from being sick from the last two weeks – slowly but surely!

Blueberry & Ricotta French Toast Roll Ups

Continuing on with the theme of Blueberries for the month of May on Amcarmen’s Kitchen, tonight I will be sharing with you a recipe that I have seen lurking around the Internet for quite some time now – well, the one’s I’ve been seeing are the Strawberry and Nutella French Toast Roll Ups, but since we’re working with blueberries, here’s a recipe for Blueberry and Ricotta French Toast Roll Ups! This might just be the perfect Mother’s Day brekkie recipe for your Mom this upcoming Sunday! Feel free to change it up a bit to add her favourite fruits into the roll ups.

The original recipe by Chung-Ah over on DAMN Delicious uses cream cheese instead of ricotta cheese, but to my luck, the grocers I went to over the weekend didn’t have any in stock. Well, actually they did but it was a giant 2kg block of cream cheese and I thought to myself, what am I going to do with 2kgs of cream cheese?! I guess I could’ve made a cheesecake, but I think I’ve had too many cheesecakes already for the past month *cheeky grin*.

Blueberry & Ricotta French Toast Roll Ups Ingredients

PREP TIME 15 MINS | COOKING TIME 10 MINS | SERVES 2-3

INGREDIENTS

  • 6 slices of white bread, crusts removed*
  • 2 large free range eggs
  • 100g ricotta cheese
  • 1/2 cup fresh blueberries
  • 1/3 cup granulated sugar
  • 2 tbsp milk
  • 2 tsp cinnamon powder
  • 1/2 tsp vanilla extract
  • Knob of unsalted butter
  • Pinch of ground nutmeg

*Do not discard your crusts! You will soon find out in next week’s post 🙂

METHOD

  1. In a large deep dish, beat the eggs, milk, vanilla extract, and ground nutmeg together until well combined. Set aside.
  2. In a medium-sized bowl, combine the sugar and cinnamon powder. Set aside.
  3. Use a rolling pin the flatten the bread slices to about 1/4-inch thick and spread the ricotta cheese on the bottom of each slice of bread. Top each with a row of blueberries.
  4. Bring the bottom edge of the slice of bread tightly over the filling, rolling form the bottom to the top until the top of the slice of bread is reached. Repeat with the remaining slices of bread. Dip the bread rolls into the egg mixture.
  5. Melt the unsalted butter in a large skillet over medium-high heat. Working in batches, add the bread rolls to the skillet, 3 to 4 at a time and cook until evenly golden brown on all sides, about 2-3 minutes per side.
  6. Once done, immediately dredge the bread rolls in the cinnamon-sugar mixture, pressing down to coat.
  7. Serve immediately and enjoy!

Alright, so I may have overcooked the roll ups a bit as they were pretty brown when I flip them over – and this was only because I frantically searched the kitchen for tongs to use to flip them over. In the time span of looking for them, the roll ups went pretty brown *oops!* Note to self – make sure I have all the essential equipment ready before cooking!

These roll ups are such a fun twist to the traditional french toast. Like Chung-Ah says “who wants to go back to a slice of bread when you can have them rolled up?” I totally agree with her, however, I do think that my Cornflake-crusted French Toast and Milo French Toast in the form of a piece or two of sliced bread is also a fun twist to the traditional french toast. Hello Everyone! I hope you guys had a good Easter weekend! Even though we don’t get a long Easter weekend here in Brunei, I did still manage to enjoy my Easter Sunday day off. I can’t believe that there’s only less than 2 weeks of April left and that May is just around the corner! Time sure flies by when you’re (not) having fun at work. Haha! I know I’ve mentioned this in previous posts about how everything is just becoming routinely for me and it’s actually becoming quite depressing. I’m in need for a little excitement in my life. I think my thoughts have been heard because I’m flying off tomorrow night for a little staycation in the Philippines! The company I’m working at is sending me and three other colleagues to the Philippines for a little work/play adventure, attending events and meetings on behalf of the company, and of course what’s a trip to the Philippines without a little summer fun in the sun? I mean, it’s pretty much our tagline – It’s More Fun In The Philippines!

Breakfast Muffins: Avocado & Blueberry

On this note, I definitely won’t be uploading a post next week because I’ll be away from Thursday to Monday night. Since my Sunday, and the public holiday on Monday is taken up for this trip, I won’t have my dish prepared for a post. So this will be my last Avocado recipe for the month of April that I will be sharing with you guys! In fact, after I’ve posted this, I’ve got to get a head start on my packing because I still have to be at the office tomorrow up until 2 hours before my flight – what the heck right? Also, I was only told on Monday that I’d be flying off, and everything was only firmly confirmed yesterday afternoon. As usual, before we dive into tonight’s recipe, please check the original recipe out by Ali from Gimme Some Oven.

Breakfast Muffins: Avocado & Blueberry Ingredients

PREP TIME 15 MINS | COOKING TIME 25-30 MINS | SERVES 16 MUFFINS

INGREDIENTS

For the avocado and blueberry muffins

  • 2 cups plain flour
  • 1 cup plain fat-free yoghurt
  • 1/2 cup white granulated sugar
  • 1 large free range egg
  • 1 punnet (125g) fresh blueberries
  • 1 ripe avocado, halved, peeled, deseeded and roughly chopped
  • 2 tsp baking powder
  • 1 tsp pure vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 tsp salt

For the streusel topping

  • 30g unsalted butter, melted
  • 2 tbsp plain flour
  • 2 tbsp raw sugar
  • 2 tbsp white granulated sugar

METHOD

  1. Preheat oven to 190C (375F or gas mark 5). Line a 12-hole muffin pan with paper cases and set aside. Now since this recipes makes about 16 muffins, you can line another 6-hole muffin pan (if available), or if you only have one muffin pan, then bake in batches if needed.
  2. For the streusel topping, add all the ingredients in a small bowl until combined and crumbly. Set aside.
  3. In a medium-sized bowl, add the plain flour, baking powder, baking soda, salt, and cinnamon (optional) and stir together to combine. Set aside.
  4. In a separate large mixing bowl, add the roughly chopped avocado and using an electric mixer, beat on medium speed until smooth. Add the sugar in and beat until well blended. Follow with the yoghurt and pure vanilla extract, beating again until just combined.
  5. Add half of the flour mixture into the wet ingredients and beat until just combined. Add in the other half of the flour mixture and beat until well combined.
  6. Gently fold the blueberries in using a rubber spatula, then spoon the batter into the muffin cups, filling them about 2/3 of the way. Sprinkle with the streusel topping and place in the oven to bake for 25-30 minutes or until a tooth pick inserted to the centre of a muffin comes out clean.
  7. Set aside to cool in the muffin pan for about 5 minutes before transferring them to a wire rack to cool down completely. Serve for breakfast or afternoon tea and enjoy!

Muffins taste best on the same day, though they may be stored covered tightly at room temperature for 3 days or in the refrigerator for 5 days.

Now, I know I have a couple of friends and colleagues who don’t particularly like the taste of avocado; don’t ask me why because I think that they’re just plain weird for not liking avocado (hehe!), but give them one of these beautiful green muffins and they’ll probably be hooked on it. The avocado flavour in these muffins are not overpowering or predominant, but there is a slight hint of it in each bite you take. These muffins are a classic twist to a classic blueberry muffin and are light, moist, and al the more healthy for you because of the avocado in place of all the other oils you’d otherwise use when making muffins. Top them off with a crumbly streusel to give it an “extra muffin-y sweetness” as Ali says.

Smashed Avo Toast (9 ways)

Hello Everyone! Finally I am back on track with my posts and the theme for the month of April is Avocado! All you need is about half a medium-sized avocado everyday as it provides 1% of the calcium, 5% of the magnesium, and 10% of the potassium that you need daily. Avocados are a good source of potassium, which can help lower blood pressure, and in addition, the dark green flesh just under an avocado’s brittle skin contains large amounts of disease-fighting compounds. Though avocados are proven to help lower blood pressure and an abundance of health benefits, we have to be weary of how much we intake daily as they are also high in calories.

Tonight, I will be sharing 9 different ways you can start your mornings with a smile on your face with 9 different smashed avocado toasts! INGREDIENTS

  • 2 slices multigrain brown bread
  • 1/2 avocado, smashed
  • 1 small red onion, cut into rings
  • 2 tsp capers
  • Smoked salmon slices with five peppers

METHOD

  1. Lightly toast bread in a toaster for about 1-2 minutes.
  2. Spread a generous amount of the smashed avocado onto the toast and top with smoked salmon, red onion rings, and capers. Sprinkle with a touch of chilli flakes for an added kick (optional).
  3. Enjoy!

INGREDIENTS

  • 2 slices multigrain brown bread
  • 1/2 avocado, smashed
  • 1 punnet (250g) grape tomato medley, halved
  • 4 cherry bocconcini cheese, sliced
  • 4 tbsp balsamic vinegar
  • Ground sea salt and black pepper, to taste
  • Olive Oil
  • Sweet basil leaves

METHOD

  1. Combine the grape tomatoes, bocconcini slices, and sweet basil leaves in a small bowl. Drizzle with olive oil and season with a touch of ground sea salt and black pepper to taste. Set aside and leave to macerate.
  2. Meanwhile, heat the balsamic vinegar in a small non-stick saucepan over medium-high heat. Simmer, continuously stirring to check on the consistency of the glaze, until the vinegar reduces to a thick sauce, about 5 minutes. Remove from the heat and leave to cool down for a bit.
  3. Lightly toast bread in a toaster for about 1-2 minutes.
  4. Spread a generous amount of the smashed avocado onto the toast, top with the tomato cappers salad, and drizzle the balsamic reduction over the salad.
  5. Enjoy!

INGREDIENTS

  • 2 slices multigrain brown bread
  • 1/2 avocado, smashed
  • 2 large free range eggs
  • Chilli Flakes
  • Parsley, roughly chopped

METHOD

  1. Bring a small pot of water to a rolling boil. Once boiling, reduce the water to a rapid simmer before gently lowering the eggs one by one into the pot. Cook for 5 minutes for a runny yolk, or 7 minutes for a barely set yolk. Once done, remove from the heat and place in an ice bath to stop the cooking process. Once cool, peel the shell off and slice.
  2. Lightly toast bread in a toaster for about 1-2 minutes.
  3. Spread a generous amount of the smashed avocado onto the toast, top with the sliced eggs, and sprinkle with a touch of chilli flakes, and parsley.
  4. Enjoy!

INGREDIENTS

  • 2 slices multigrain brown bread
  • 1/2 avocado, smashed
  • 4 large strawberries, sliced
  • 4 tbsp balsamic vinegar
  • Goat’s cheese, crumbled

METHOD

  1. Heat the balsamic vinegar in a small non-stick saucepan over medium-high heat. Simmer, continuously stirring to check on the consistency of the glaze, until the vinegar reduces to a thick sauce, about 5 minutes. Remove from the heat and leave to cool down for a bit.
  2. Lightly toast bread in a toaster for about 1-2 minutes.

PREP TIME <5 MINS | COOKING TIME 8 MINS | SERVES 2

INGREDIENTS

  • 2 slices multigrain brown bread
  • 1/2 avocado, smashed
  • 4 large brown mushrooms, sliced
  • 1/2 bunch (100g) shimeji mushrooms
  • 1/2 bunch (50g) enoki mushrooms
  • 2-3 garlic cloves, minced
  • Ground sea salt and black pepper, to taste
  • Knob of unsalted butter
  • Olive oil
  • Parsley, roughly chopped

METHOD

  1. Melt the unsalted butter in a small frying pan over medium-high heat and add about a teaspoon of olive oil.
  2. Sauté the minced garlic until golden brown and fragrant, about 30 to 45 seconds. Add in the sliced brown mushrooms and shimeji mushrooms and cook until tender, about 3-4 minutes.  Season with pinch of ground sea salt and black pepper. Once tender, remove from the pan and set aside.
  3. In the same pan, heat about 3 tbsp of olive oil over high heat until slightly smoking. Add the enoki mushrooms in and fry until golden brown in colour, about 2-3 minutes. Once done, transfer to a small plate lined with a paper towel. Set aside.
  4. Lightly toast bread in a toaster for about 1-2 minutes.
  5. Spread a generous amount of the smashed avocado onto the toast and top with the sautéd garlic mushrooms and the fried enoki mushrooms. Garnish with a touch of ground black pepper and parsley.
  6. Enjoy!

INGREDIENTS

  • 2 slices multigrain brown bread
  • 1/2 avocado, smashed
  • 1 can (200g) chickpeas, drained
  • 2 tsp ground smoked paprika
  • Ground sea salt and black pepper, to taste
  • Olive oil
  • Parsley, roughly chopped

METHOD

  1. Preheat oven to 200C (400F or gas mark 6). Line a baking tray with aluminium foil. Set aside.
  2. Add the drained chickpeas in a small bowl together with the ground smoked paprika, sea salt, black pepper, and a drizzle of olive oil. Toss to coat.
  3. Spread the chickpeas onto the prepared baking tray and roast in the oven for about 10 minutes. Once done, remove from the oven.
  4. Lightly toast bread in a toaster for about 1-2 minutes.
  5. Spread a generous amount of the smashed avocado onto the toast and top with the roasted chickpeas and parsley.
  6. Enjoy!

9. Chorizo Sausage & Sweet Corn

PREP TIME <5 MINS | COOKING TIME 4-6 MINS | SERVES 2

INGREDIENTS

  • 2 slices multigrain brown bread
  • 1/2 avocado, smashed
  • 1 chorizo sausage, sliced
  • 1 can (200g) sweet corn kernels, drained
  • Olive oil

METHOD

  1. Heat olive oil in a small frying pan over medium-high. Pan-fry the chorizo slices until browned, about 2-3 minutes per side. Once done, transfer to a plate lined with a paper towel. Set aside.
  2. Bring a small pot of water to a rolling boil and blanch the sweet corn kernels for about a minute or two. Drain and set aside to cool down for a bit.
  3. Lightly toast bread in a toaster for about 1-2 minutes.
  4. Spread a generous amount of the smashed avocado onto the toast, top with the pan-fried chorizo sausages and sweet corn kernels, and drizzle with a bit of the chorizo oil (optional).
  5. Enjoy!

Just a little side note before I end tonight’s post, I spent the whole day amending quite possibly the same artwork because their comments/amendments were all on an installation basis. Such completely waste of time which then prevented me from actually completing the work I had set to do today because I had to keep going back and forth to the same bloody artwork.

Hello Everyone! So I don’t think I’ve shared this little piece of information on the blog before – I’m going on holiday starting this coming Friday! I’ll be in Singapore for a 10-hour layover (yay me) before finally setting off to my final destination. I won’t share where I’ll be going as I’ve been trying so hard to keep this a secret from a few people – but you’ll definitely know in next week’s post. I’ve got everything planned out and prepared for the blog for this month so you guys don’t have to worry about me being gone from Amcarmen’s Kitchen for another 3 weeks (yeap, that’s how long I’ll be on holiday for) seeing as I just returned for 2017.

Anyway, that aside, today’s recipe has been made multiple times before back when I was still studying in Sydney. My then housemate and I would whip this cake up whenever we’d see our fruit bowl of bananas start to get all spotty and soft. This is definitely a recipe you should consider when you find yourself in a similar situation – instead of throwing those bruised bananas, which are actually still pretty mint, mash them up and make an upside-down banana cake! You definitely won’t regret it.

This is an incredibly moist and flavourful dessert, but it could be great for breakfast or as a morning/afternoon snack too. You can take it a step further as well by topping it all off with some toasted pecans, a generous amount of caramel sauce, and topped with a scoop or two of creamy vanilla ice cream. I decided to keep mine simple without all the extra and unnecessary sugars on top since I’m not a big fan of too much sugar, and the fact that my Mom is a diabetic is an enough reason to hold back on the sugar since she’ll definitely be having a slice or two… Or even the whole cake to herself.

Upside-down Banana Cake Ingredients

PREP TIME 15 MINS | COOKING TIME 55-65 MINS | SERVES 10-12

INGREDIENTS

  • 65g unsalted butter, cut into cubes
  • 2/3 cup brown sugar
  • 2-3 large bananas, 1/3″ rounds
For the cake batter
  • 70g unsalted butter, softened
  • 2 large free range eggs
  • 1 & 3/4 cups plain flour
  • 1 cup overripe bananas, mashed
  • 3/4 cup granulated sugar
  • 1/3 cup plain yoghurt
  • 1 & 1/2 tsp baking powder
  • 1 & 1/2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

METHOD

  1. Preheat the oven to 180C (350F or gas mark 4). Grease a 9″ x 2″ round cake pan, or an 8″ x 8″ x 2″ square cake pan. Spread the 2/3 cup of brown sugar on the bottom of the pan and scatter the pieces of cubed butter on top.
  2. Place the pan in the oven for about 5 to 7 minutes until the butter has completely melted. Remove the cake pan from the oven and give the butter and brown sugar a stir, spreading evenly on the bottom. Arrange the sliced bananas to cover the caramel bottom then set aside.
  3. For the batter, add the dry ingredients – plain flour, baking powder, baking soda, baking powder, ground cinnamon, and salt – to a medium sized bowl and stir together until combined. Set aside.
  4. In a large bowl using a handheld electric mixer on medium speed, cream the softened butter granulated sugar together until pale in colour. Add the eggs and vanilla extract, mixing well to combine. Then add in the plain yoghurt and mashed bananas, again mixing well to combine.
  5. Turn the speed of your mixer on low and slowly add the dry ingredients to the wet. Mix just enough to combine.
  6. Pour the batter over bananas, smoothing the top and then place in the oven to bake for 30 minutes at 180C. After half an hour, reduce the heat to 170C (325F or gas mark 3) and bake for additional 25-35 minutes until a toothpick inserted in the centre comes out completely clean.
  7. Once down, remove form the oven and let it cool in the pan completely, or at least until the bottom is barely warm before inverting onto a plate. Use a knife to loosen the edges from the pan then place a plate upside-down on top of the pan, then invert cake.
  8. At this point you can make a caramel sauce to top off the cake and add a handful of toasted, roughly chopped pecans to your dessert/breakfast/snack. Otherwise, enjoy the cake as it is!

Hello Everyone! We’re kicking off the Year on Amcarmen’s Kitchen, and for the month of February, with sumptuous recipes that pays tribute to one of the most popular health foods on Earth. Known, as the Banana, the curved yellow fruit is one of the most widely consumed fruits in the world for good reason. Other than its ability to aid in regulating blood pressure due to the amount of potassium present in bananas, they are also known for helping with asthma, reducing the risk of developing childhood leukemia and help combat cancer, reducing the risk of cardiovascular disease, lower blood glucose levels and improve blood sugar, and many more health benefits that can be found over on Medical News Today.

I stumbled upon tonight’s recipe while I was browsing through Pinterest, in search for creative and innovative recipes to test out myself for the upcoming year for Amcarmen’s Kitchen. What initially attracted me to this recipe is the idea of adding chai tea leaves to an already delicious Banana & Cinnamon Smoothie. The original recipe can be found over on Gimme Some Oven, where the author Ali talked about why choose between having tea or a smoothie when you can have both? A brilliant idea by the way as my Banana & Cinnamon Smoothie definitely amped up in taste and flavour with the addition of Spicy Chai tea leaves from Twinings. Our local grocers didn’t have regular chai tea so I had to go for the spicy chai – nonetheless it was just as flavoursome as regular chai with an added kick to it to really boost the overall taste of the smoothie. I’m definitely keeping this recipe up my sleeve whenever I feel like a hit of protein to my breakfast/brunch mornings.

Spicy Chai & Banana Cinnamon Smoothie Ingredients

PREP TIME 5 MINS | COOKING TIME  | SERVES 3

INGREDIENTS

  • 2 large bananas, peeled and broken into thirds or quarters
  • 1 cup milk
  • 1/2 cup plain yoghurt
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 tea bag Twinings Spicy Chai tea leaves

Optional:

  • 1 tsp maple syrup (if you’d like a sweeter smoothie)

Note: Feel free to make this smoothie completely vegan-friendly by substituting the milk out for almond milk and omitting the plain yoghurt out by adding an extra quarter cup of almond milk.

METHOD

  1. Add all the ingredients to a blender and pulse until smooth.
  2. Serve immediately, topped with a few extra slices of banana if desired and some ground cinnamon.

Blackberry, Pineapple, & Spinach Smoothie

Hello Everyone! First of all, I apologise that it has taken me this long to be able to edit this part of the post. If you do not already know, I had a flight to catch on Wednesday evening to Singapore. Upon arriving in Singapore at about 7:20pm that evening, I headed straight for the hotel to drop my things off, and then quickly headed back out again with my sister for a very late dinner. After dinner, we shopped for a bit, mainly to buy some water and a comb since I forgot to pack mine. We then said our goodbyes at the train station and headed in opposite directions. I didn’t get back to my hotel until about 10:30pm, maybe 10:45pm that night, and I hadn’t prepared my usual Wednesday post. Nevertheless, I quickly got it up because I am very particular about getting my posts up on its scheduled day – I just haven’t shared it on my other social media pages because I wanted to write this part out properly.

So yes! I am in Singapore until this coming Wednesday 9th March. I’m here to do some important errands, and of course to have some rest and relaxation from work, and of course to do some shopping! Aside from that, it’s my sisters birthday as well (March 04). We’ll be celebrating by going on a River Safari all day Saturday, and then spending the Sunday café hopping with my friend Pamela. I also have plans to meet up, cook, eat, and catch up with some friends from high school so that should be fun!

Anyway, so before we race on to the recipe, please check out the original over on Way Fair. I replaced the milk with coconut water for a diary-free option, and coconut water is filled with electrolytes and potassium, which are two nutrients your body craves when expending lots of energy. It’s low in calories, fat, and sugar meaning that this is the liquid-base you want when working out. In addition, blackberries contain a handful amount of vitamins such as vitamin A, B1, B2, B3, B6, C, E, and K. Blackberries also include calcium, iron, magnesium, phosphorous, potassium, and zinc. Puto (Steamed Rice Cakes)

Hello Everyone! So this is kind of unrelated, but related at the same time – I typed puto into Google because I wanted to know the English name for it (well I knew what they were in English, I just needed confirmation). To my surprise, Urban Dictionary was the first result. Puto is a Spanish word used to describe a male prostitute and is sometime’s offensive for homosexuals. In Mexico, the word is used for cowards and traitors. Anyway! Sorry but this post will not be about male prostitutes, but instead, it’ll be of a recipe for a steamed rice cakes. Before I begin, if from this point onwards you see me write put instead of puto, it’s because my laptop automatically autocorrects it to put. I have tendency to just keep typing without going back and reviewing what I’ve written.

Anyway, here’s an interesting fact about puto that I myself did not know until I did some research for this post. Puto is believed to have been derived from from Indian puttu of Tamil origin. These steamed rice cakes are usually eaten as a dessert, but most Filipinos much prefer to have them for breakfast with coffee or hot chocolate, or for a mid-afternoon snack with dinuguan (blood stew). The recipe that I will be sharing today is not, in a sense, the traditional puto you’d find in the Philippines. It is non-traditional because, self-raising flour is used instead of rice flour. Texture wise, it has more bite and is less airy than what I’ve had before. To be very honest, these are the best-tasting putos I’ve ever had and I am glad that I came across this recipe.

I actually learnt this recipe from my Mom’s high school friend when we visited her and her family in Melbourne a few months back in early June. She runs her own catering business, together with her mother and sister, and while spending time at hers, I learnt how to make these delicious non-traditional putos. I think I made quite a hefty batch over the two days that they needed to be made, and I missed out on making a hundred of them for a special order because that was the day my family and I left and flew over to Brisbane.

I’ve made these rice cakes numerous times after having learnt from my Mom’s friend. I’ve made them for a family gathering in Brisbane and they were a big hit! I’ve also made them for a few family friends here in Brunei and they too loved it. The last time I made these, which was for this blog post as well, was a big hit when I shared them amongst my friends too. I’m pretty sure that you’ll love these cakes too when you get around to making them. If you for some reason don’t like them, then I’m sorry, but we can’t be friends *cheeky grin*.

Puto (Steamed Rice Cakes) Ingredients

PREP TIME 5 MINS | COOKING TIME 1 HOUR* | SERVES 2 DOZEN**

*Cooking time depends on how big a steamer you have. Mine is quite small and therefore I had to work in 3 batches to steam all cakes for this recipe.

**Serving size depends on the size of the moulds that you use – as stated above, when I used smaller moulds, I could easily get about twice the serving size from the bigger moulds that I used for this recipe post

INGREDIENTS

  • 2 cups self-raising flour
  • 1 cup caster sugar
  • 1 cup fresh milk
  • 3/4 cup desiccated coconut
  • 3-4 pcs sliced cheese, cut into thin strips
  • 3 large free range eggs, well beaten
  • 2 tbsp butter (I used olive butter)
  • 1 tbsp mayonnaise
  • 1 tbsp vanilla extract

METHOD

  1. Prepare your steamer by wrapping the lid with cloth and tie it in place around the handles. This will catch the water vapours from dripping onto you cakes and prevent them from getting wet and soggy.
  2. Add water to a pot and bring it to a boil.
  3. Combine all the dry ingredients in a large mixing bowl and whisk it together until combined. Next and in the butter and mayonnaise, and using the whisk, mash it into the flour mixture until moist crumbs form. Next, add in the milk, eggs, and vanilla extract, and mix until well combined.
  4. Line your moulds in the steamer and carefully pour the batter into the moulds and top, making an X, with the sliced cheese strips (see photo above).
  5. Carefully place the steamer over the top of that pot and cover with the cloth-wrapped lid. Steam for about 20 minutes.
  6. Once done, remove the steamer from the pot and place on a heat-proof surface. Remove the cooked rice cakes and repeat steps 4-6 for a fresh batch (because my steamer is quite small, I had to do three batches altogether).
  7. Leave the cakes in their moulds aside until they have cooled down slightly. Once they are quite cool, they will easily pop out from their moulds.
  8. Transfer to a serving dish and serve warm – either for breakfast, dessert, or an afternoon snack. Share and enjoy!
